Reba's Cookies


         I was looking to get a little creative in the kitchen one snowy evening, so I decided to combine a few of my favorite cookie recipes. Nutella is a necessity in our kitchen, so we already had a few extra jars of that. We made coconut shrimp for dinner the previous night so we had a half of a bag of sweetened coconut flakes in the pantry, and I thought: hey, this might just be the ultimate combo of 2014. Without the added touches of Nutella and coconut, the recipe is just a modified (and a bit thicker) version of oatmeal chocolate chip cookies. Once they came out of the oven, my friends and parents agreed that these were some of the most delicious and (forgive me for this word..) moist cookies they had ever tasted. So bake away, friends! I hope your taste buds find happiness when you try out Reba’s Cookies. ;)


Ingredients:

Wet:
1/2 cup butter
1/2 tsp vanilla extract
1 egg
3/4 cup brown sugar

Dry:
1 1/2 cup rolled oats
1 1/4 cup flour
1/2 tsp salt
1/2 tsp baking soda

1 cup Nutella
1/2 semi-sweet cup chocolate chips
3/4 cup coconut flakes


Directions:

1. Preheat oven to 375*F

2. Whisk wet ingredients- you can choose to either melt butter or leave it softened 


3. In a separate bowl, mix your dry ingredients


4. Slowly add dry ingredients into the wet mix, stirring as you go.


5. Fold in chocolate chips

6. Grease cookie sheet or line with parchment paper

7. Place balls of cookie dough on cookie sheet about an inch apart

8. Hollow out the center of each cookie and add about ½ tablespoon of Nutella


9. Cover the Nutella with the surrounding cookie dough


10. Sprinkle coconut flakes on top of each cookie




11. Bake for 10-12 minutes

12. Let cookies cool on rack for 5 minutes


13. Enjoy the goodness
