This recipe is simple, easy, and can basically be made with a few simple ingredients you already have at home!
Serves 2-4 people
Ingredients:
vegetables...
-1/2 white onion
-2 carrots
-6 brussel sprouts
-a few bunches of kale
-1/2 green pepper
-3 garlic cloves
------------------
seasonings... (all to taste)
-------------------
-1 jar tomato sauce
-------------------
-parmesan cheese for topping
Directions:
1. Chop all your vegetables into bite sized pieces
2. Put a large pot over medium/low heat and drizzle olive oil at the base.
3. While this is getting hot, boil a large pot of water for the pasta (when water is boiling, cook pasta according to package instructions)
4. Throw in your onions, garlic, and carrots and let them brown for a few minutes
5. Add the green pepper and brussels sprouts; continue sautéing these veggies all together for a few more minutes
6. Add your kale in last along with the seasonings to taste
7. Once the kale has wilted, pour in the jar of tomato sauce and reduce heat to a simmer. Cover with lid for about 10 minutes, occasionally stirring.
8. Time to plate! Pasta first, spoon your sauce over it, and sprinkle with parmesan. Yum!
****I was cooking for one person so I only made the amount of pasta that I would eat that night. I cooked all of the sauce, used what I needed, and froze the rest for another meal. :)
****These veggies were the ones I had in my pantry/fridge. Any veggies would do! See what you have and experiment. It's such a simple recipe, but the result is comforting and delicious!
