I love this dish because it can be made in a pinch with simple ingredients that are readily available! ;)
Ingredients:
These ingredients can easily be substituted... I'll specify what I used in parentheses!
Prep:
1. Let the cast iron skillet and oil get really hot before adding and sautéing your veggies. I cooked them until they were crisp (my favorite).
2. Spread out the veggies in your skillet and pour the egg mixture on top. Turn off the heat and transfer to the oven for about 15 minutes, or until the egg sets.
3. Slice like a pizza and serve with fresh pepper (and maybe some more cheese... :))

- Veggies to fill the base of your pan (brussels sprouts, onion, broccoli, pepper)
- 1 cup of cheese (sharp cheddar and parmesan)
- Seasonings (garlic salt, pepper, oregano-- all to taste)
- 3/4 cup of milk (almond milk)
- 5 eggs
- 2 tbsp oil (olive oil)
Prep:
- Preheat the oven to 350 degrees
- Chop all of your veggies
- Mix eggs, milk, cheeses, and seasonings with a whisk
- Pour about 2 tbsp of olive oil into a cast iron skillet on medium heat
